Green Garden Grow – In Season

We are all well into the middle of our growing season here in our backyard farm.  Despite the very hot weather and sporadic severe thunderstorms, our plants and vegetables are fairing extremely well.

And this is the part of the process that I excel in – picking and preparing.  The sowing and the tending falls on my Hubby who works very hard in making our green garden grow.

This week I share with you two potato recipes – one that my Mom passed down to me and the other a traditional potato salad.

Let me preface this post by saying, my very Irish Hubby gave the his seal of approval on both recipes – although he really favored the traditional recipe.

 

Potato Salad Italian Style

One pound of potatoes scrubbed clean and boiled

4 plum tomatoes sliced in quarters

3 basil leaves chopped

2 tablespoons of Olive Oil

Salt and Pepper to taste

Combine all ingredients and serve cold!

These were used for the Traditional Recipe but eaten too quickly that I didn’t get a chance to take a picture!

Traditional Potato Salad

One pound of potatoes scrubbed clean and boiled

1 cup of Mayo

1 tablespoon of spicy mustard

2 tablespoons of sour cream

1 cup of celery and white onion diced

Salt and Pepper to taste

Combine all ingredients and serve cold
